Preserved Duck Eggs, also well known as Pidan, Century Eggs, or Thousand Year Eggs are great Chinese delicacy. Traditionally, the eggs were pickled, buried in mixture of coal, chalk, mud, alkaline clay. Nowadays, the curing salt enables the egg to be preserved for months without the need for refrigeration. The century eggs are generally translucent, jelly-like, greenish-black egg-white with a hint of fermented flavour. 

The century egg is ready to eat  - peel and slice to serve. They are generally served with congee alongside condiments such as spring onions, tofu and pickled vegetables.
