Hikari Miso is made by fermenting soy beans and rice, this miso is mellow and slightly sweeter. White miso is made from soy beans, a high percentage of rice, fermented to create a light and slightly sweet taste. This makes a wonderful miso soup, marinades or dressings (salad or for meat)
Tip: mix some miso, sesame oil, soy sauce, brown sugar for that meat marinade. Miso and sesame oil also makes a delicious salad dressing
