Dace or also known as ‘mud carp’, is fished from the Pearl River, China. It is fried and tinned with soybean oil, black beans, spices and salt. Tinned dace are popular over Asia and is generally enjoyed straight from the tin, or simply warmed through and topped onto steamed rice, rice congee, or even stir fried vegetables
